WHere is a simplified version of a beverage found on a new menu. This is a party-sized prepared mix that's bursting with the flavours of the holiday season, which makes it excellent for your festive gathering. Any leftover cordial for brunch beverages, puddings, or for another batch of this cocktail.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Place the listed ingredients in a pan, bring to a gentle boil, mixing until the sugar dissolves. Next, take off the heat and leave to reach room temperature entirely. Decant into an sealable bottle, seal and store in the fridge, it will last for around a month.
For the Batch Mix: Combine the specified liquid ingredients into a big jug, leave to sit for one hour, then filter it , ideally through cheesecloth, making it perfectly clear.
For serving: Pour 85ml from the cocktail base into your stirring glass containing ice, and stir lightly for one minute to chill. Filter into a frosted cocktail glass or equivalent, garnish with the cranberries adding the final touch with a quick spritz with the mandarin essence over the drink.
